Make authentic restaurant-style mutton curry at home using Anagh Meat Masala. This recipe gives you rich thick gravy, tender fall-off-the-bone mutton, and deep dhaba flavor — ready in just 60 minutes.
Ingredients
- 500g mutton (bone-in — essential for flavor)
- 2 medium onions (finely chopped)
- 2 medium tomatoes (pureed)
- 1 cup curd (whisked smooth)
- 1 tbsp ginger garlic paste
- 2 tbsp Anagh Meat Masala
- 1 tsp Kashmiri red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 2 bay leaves
- Salt to taste
- 3 tbsp oil
- 1 cup water
- Fresh coriander for garnish
- Sliced ginger for garnish
Step-by-Step Mutton Curry Recipe
- Marinate Mutton: Mix mutton with whisked curd, turmeric, and 1 tbsp Anagh Meat Masala. Marinate for minimum 30 minutes — 2 hours is ideal. Curd tenderizes the meat and spices penetrate deep.
- Temper Spices: Heat 3 tbsp oil in a pressure cooker. Add cumin seeds and bay leaves. Let splutter for 30 seconds on medium heat.
- Fry Onions: Add finely chopped onions. Fry on medium heat for 10 to 12 minutes until deep golden brown. This is the most important step — do not rush it.
- Ginger Garlic: Add ginger garlic paste. Cook for 2 minutes until completely raw smell is gone.
- Tomato Base: Add tomato puree. Cook on medium heat, stirring occasionally, until oil separates from the sides — about 7 minutes.
- Add Spices: Lower flame. Add Kashmiri red chili powder, salt, and remaining 1 tbsp Anagh Meat Masala. Stir well and cook for 2 minutes.
- Seal Mutton: Add marinated mutton. Increase to high heat. Cook for 7 to 8 minutes stirring frequently — this seals the juices inside the meat.
- Pressure Cook: Add 1 cup water. Close lid. Cook on high flame for 1 whistle, then reduce to lowest flame for 20 minutes. Turn off heat and let pressure release naturally — do not force open.
- Finish: Open cooker. If gravy looks thin, cook uncovered on medium heat for 5 minutes until it thickens. Taste and adjust salt.
- Serve: Garnish with fresh coriander and sliced ginger. Serve hot with roti, naan, or steamed rice.
Pro Tips for Perfect Mutton Curry
- Always use bone-in mutton — bones release collagen that thickens gravy naturally
- Longer marination = more tender meat — overnight in fridge is best
- Deep golden onions are non-negotiable — pale onions give weak watery gravy
- Natural pressure release is important — forced release makes mutton tough
- Oil separating from masala = fully cooked base — never skip this sign
- Add Anagh Meat Masala in two stages — half in marination, half in cooking — for deeper flavor
Why Anagh Meat Masala Makes the Difference
- Stone-ground small-batch blend — not mass produced
- Specifically balanced for red meat — deeper, bolder spice profile
- No preservatives, no artificial color, no fillers
- Works for mutton, beef, and lamb dishes equally well
