Dal Makhani Recipe Restaurant Style

Soak Time: 8 hours  |  Cook Time: 60 minutes  |  Serves: 4

Make authentic restaurant-style dal makhani at home using Anagh Garam Masala. This recipe gives you rich creamy black lentils, buttery tomato gravy, and that iconic dhaba flavor — the secret is in the slow simmer.

Ingredients

  • 1 cup whole black urad dal
  • 1/4 cup rajma (kidney beans)
  • 3 tbsp butter
  • 1 tbsp oil
  • 1 medium onion (finely chopped)
  • 1 tbsp ginger garlic paste
  • 2 medium tomatoes (pureed)
  • 2 tsp Anagh Garam Masala
  • 1 tsp Kashmiri red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 3 tbsp fresh cream
  • 1 tsp kasuri methi (crushed)
  • Water as needed

Step-by-Step Dal Makhani Recipe

Whole black urad dal and rajma soaked overnight for dal makhani
  1. Soak Overnight: Wash and soak whole black urad dal and rajma together in plenty of water for 8 hours or overnight. Do not skip this — proper soaking is what gives dal makhani its creamy texture.
  2. Pressure Cook: Drain soaked dal. Add to pressure cooker with 3 cups fresh water and salt. Cook on high for 2 whistles, then lowest flame for 20 minutes. Dal must be completely soft and mushy — press a grain between fingers, it should crush easily.
  3. Make Masala Base: Heat 1 tbsp butter and 1 tbsp oil in a heavy pan. Add finely chopped onion. Fry on medium heat for 8 minutes until deep golden brown.
  4. Ginger Garlic: Add ginger garlic paste. Cook for 2 minutes until raw smell is completely gone.
  5. Tomato Base: Add tomato puree. Cook on medium heat for 7 to 8 minutes until butter separates and masala turns deep red. This deep red color means masala is properly cooked.
  6. Add Spices: Lower flame. Add turmeric, Kashmiri red chili powder, and Anagh Garam Masala. Stir well and cook for 2 minutes.
  7. Combine: Add cooked dal to masala. Mix well. Partially mash some lentils against pan side — this thickens dal naturally without any flour or cornstarch. Add water to adjust consistency.
  8. Slow Simmer: Add remaining butter. Simmer on absolute lowest flame for 20 to 25 minutes, stirring every 5 minutes. This slow cooking is the entire secret — do not rush this step.
  9. Finish: Add fresh cream and crushed kasuri methi. Stir gently. Do not boil after adding cream.
  10. Serve: Garnish with a knob of butter and cream swirl. Serve hot with butter naan or steamed rice.

Pro Tips for Restaurant-Style Dal Makhani

  • 8 hour soaking is non-negotiable — never cook unsoaked dal
  • Dal must be completely mushy after pressure cooking — al dente dal = bad dal makhani
  • Slow simmer of 20 to 25 minutes separates home cooking from restaurant quality
  • Partially mashing lentils thickens dal naturally — never add flour
  • Butter in 3 stages — cooking, simmering, garnish — gives layered richness
  • Next day dal makhani tastes even better — flavors develop overnight

Why Anagh Garam Masala Makes the Difference

  • Stone-ground small-batch blend — warm spice notes intact
  • Perfectly balanced for slow-cooked lentil dishes
  • No preservatives, no artificial color, no fillers
  • Works for dal makhani, rajma, and all slow-cooked dishes
